Description

Zuppa Toscana is a hearty and comforting Italian-inspired soup made with sausage, potatoes, kale, and a creamy broth. It’s a popular dish served at Olive Garden and can be easily recreated at home.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 4 cups potatoes, sliced thin
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Remove and set aside.
  2. In the same pot, sauté onion until translucent. Add garlic and cook for 1 more minute.
  3. Add sliced potatoes, chicken broth, and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. Return the sausage to the pot. Stir in chopped kale and simmer for another 5 minutes.
  5. Lower the heat and stir in heavy cream. Simmer for an additional 5 minutes. Season with salt, pepper, and red pepper flakes to taste.
  6. Serve hot with crusty bread if desired.

Notes

  • You can substitute kale with spinach for a milder flavor.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Use turkey sausage as a leaner alternative.
