Ingredients

Units Scale
  • For the Raspberry Layer:
  • 1 1/2 cups fresh or frozen raspberries
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1/4 cup water
  • Optional: 1-2 tablespoons raspberry liqueur or Chambord
  • For the White Chocolate Mascarpone Cream:
  • 8 oz mascarpone cheese, room temperature
  • 1 cup heavy whipping cream
  • 1/2 cup white chocolate, melted and cooled slightly
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Other:
  • 1824 ladyfinger cookies (savoiardi)
  • Extra raspberries and white chocolate shavings for garnish

Instructions

  • Make the Raspberry Syrup:
  • In a saucepan, combine raspberries, sugar, lemon juice, and water. Simmer for 5–7 minutes until slightly thickened. Strain if you prefer a smoother syrup. Stir in raspberry liqueur if using. Cool completely.
  • Prepare the Cream Layer:
  • In a bowl, whip the heavy cream to soft peaks. In another bowl, mix mascarpone, melted white chocolate, powdered sugar, and vanilla until smooth. Gently fold in the whipped cream.
  • Assemble the Tiramisu:
  • Dip ladyfingers briefly into the cooled raspberry syrup and layer them in a dish.
  • Spread half of the mascarpone-white chocolate cream over the ladyfingers.
  • Add a layer of fresh raspberries. Repeat layers.
  • Chill:
  • Cover and refrigerate for at least 4 hours or overnight for best flavor and texture.
  • Garnish and Serve:
  • Top with more fresh raspberries and white chocolate shavings before serving.

Notes

  • For a non-alcoholic version, skip the raspberry liqueur.
  • You can substitute mascarpone with cream cheese for a tangier flavor.
  • Assemble in individual glasses for elegant single servings.
