This White Chocolate Raspberry Tiramisu is an elegant no-bake dessert featuring layers of ladyfingers soaked in raspberry syrup, velvety mascarpone-white chocolate cream, and fresh raspberries. A perfect make-ahead treat for special occasions or indulgent weekends.

- For the Raspberry Layer:
- 1 1/2 cups fresh or frozen raspberries
- 2 tablespoons sugar
- 1 tablespoon lemon juice
- 1/4 cup water
- Optional: 1-2 tablespoons raspberry liqueur or Chambord
- For the White Chocolate Mascarpone Cream:
- 8 oz mascarpone cheese, room temperature
- 1 cup heavy whipping cream
- 1/2 cup white chocolate, melted and cooled slightly
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Other:
- 18–24 ladyfinger cookies (savoiardi)
- Extra raspberries and white chocolate shavings for garnish
Instructions
- Make the Raspberry Syrup:
- In a saucepan, combine raspberries, sugar, lemon juice, and water. Simmer for 5–7 minutes until slightly thickened. Strain if you prefer a smoother syrup. Stir in raspberry liqueur if using. Cool completely.
- Prepare the Cream Layer:
- In a bowl, whip the heavy cream to soft peaks. In another bowl, mix mascarpone, melted white chocolate, powdered sugar, and vanilla until smooth. Gently fold in the whipped cream.
- Assemble the Tiramisu:
- Dip ladyfingers briefly into the cooled raspberry syrup and layer them in a dish.
- Spread half of the mascarpone-white chocolate cream over the ladyfingers.
- Add a layer of fresh raspberries. Repeat layers.
- Chill:
- Cover and refrigerate for at least 4 hours or overnight for best flavor and texture.
- Garnish and Serve:
- Top with more fresh raspberries and white chocolate shavings before serving.

- For a non-alcoholic version, skip the raspberry liqueur.
- You can substitute mascarpone with cream cheese for a tangier flavor.
