Description

A refreshing and light summer salad combining juicy watermelon, crisp cucumber, and fresh herbs for a hydrating and flavorful dish.


Ingredients

  • 4 cups watermelon, cubed
  • 1 large cucumber, sliced or cubed
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh feta cheese, crumbled (optional)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lime juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large bowl, combine the cubed watermelon and cucumber.
  2. Add the thinly sliced red onion and chopped mint leaves.
  3. Drizzle with olive oil and lime juice.
  4. Season with salt and black pepper to taste.
  5. Toss everything gently to combine.
  6. Top with crumbled feta cheese if using.
  7. Chill in the refrigerator for 15-30 minutes before serving for best flavor.

Notes

  • For extra flavor, add a sprinkle of chili flakes or a splash of balsamic vinegar.
