- 4 cups watermelon, cubed
- 1 large cucumber, sliced or cubed
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh feta cheese, crumbled (optional)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lime juice
- Salt to taste
- Black pepper to taste
Instructions
- In a large bowl, combine the cubed watermelon and cucumber.
- Add the thinly sliced red onion and chopped mint leaves.
- Drizzle with olive oil and lime juice.
- Season with salt and black pepper to taste.
- Toss everything gently to combine.
- Top with crumbled feta cheese if using.
- Chill in the refrigerator for 15-30 minutes before serving for best flavor.
Notes
- For extra flavor, add a sprinkle of chili flakes or a splash of balsamic vinegar.
- Can be made vegan by omitting the feta cheese.
