- 12 oz vegan sausage (sliced, any variety you like)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 cup cooked brown rice (or quinoa)
- 1/2 cup vegetable broth (low sodium)
- 1/2 tsp smoked paprika
- 1/2 tsp Italian seasoning
- Salt and pepper, to taste
- 1 cup baby spinach or kale
- Fresh parsley or green onions, for garnish
- Lemon wedges, for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced vegan sausage and cook until lightly browned, about 5–6 minutes.
- Add onion, garlic, bell pepper, and zucchini. Cook for 4–5 minutes, until vegetables are tender.
- Stir in cooked rice, broth, paprika, Italian seasoning, salt, and pepper. Mix well and let simmer for 3–5 minutes.
- Add spinach or kale and cook until wilted.
- Serve hot, garnished with parsley and a squeeze of lemon, if desired.

- Use cauliflower rice for a lower-carb version.
- Add hot sauce or red chili flakes for extra spice.
