- 1 cup freshly squeezed lime juice (about 6-8 limes)
- 3/4 cup granulated sugar
- 1 tablespoon dried culinary lavender
- 1 teaspoon vanilla extract
- 4 cups water
- Ice, for serving
- Lime slices and lavender sprigs, for garnish (optional)
Instructions
- In a small saucepan, combine 1 cup of water, sugar, and dried lavender. Bring to a simmer over medium heat, stirring until the sugar dissolves.
- Remove from heat and let the lavender syrup steep for 10-15 minutes.
- Strain the syrup through a fine mesh sieve to remove the lavender flowers.
- In a large pitcher, combine the lime juice, lavender syrup, vanilla extract, and remaining 3 cups of water. Stir well.
- Refrigerate until chilled, about 1 hour.
- Serve over ice and garnish with lime slices and lavender sprigs if desired.
Notes
- Use culinary-grade lavender to ensure it’s safe for consumption.
- Adjust sugar to taste if you prefer a sweeter or tarter drink.
- Can be made a day in advance and stored in the fridge.
