Description

  • For the Vanilla Cake
  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • For the Buttercream Frosting
  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • 1 1/2 tsp vanilla extract
  • Pinch of salt
  • For the Edible Diploma Scrolls
  • White fondant
  • Red licorice strings or fruit rolls
  • Edible gold dust or gel food coloring (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In a large mixing bowl, cream butter and sugar until light and fluffy.
  • Beat in eggs one at a time, then add vanilla.
  • Gradually add the dry ingredients alternately with milk, beginning and ending with dry ingredients.
  • Divide batter between pans and bake for 25–30 minutes or until a toothpick comes out clean.
  • Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  • Prepare frosting by beating butter until smooth, then gradually adding powdered sugar. Mix in vanilla, cream, and salt. Beat until light and fluffy.
  • Level cake layers if needed and frost between layers and all over.
  • Roll fondant into 2×4 inch strips, roll into scrolls, and tie with licorice. Brush with edible gold if desired.
  • Decorate cake with scrolls and serve.

Notes

  • Scrolls can be made a day ahead to set.
  • For added flavor, use vanilla bean paste instead of extract.
  • Store cake covered in the refrigerator for up to 4 days.
