Description

Soft and chewy Filipino-style ube cookies made with purple yam and ube extract, offering a vibrant color and unique flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 cup ube halaya (purple yam jam)
  • 1 tsp ube extract
  • Optional: 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a large mixing bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and mix until well combined.
  5. Mix in the ube halaya and ube extract until evenly blended.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in white chocolate chips if using.
  8. Scoop dough using a tablespoon or cookie scoop and place on the prepared baking sheet.
  9. Bake for 10–12 minutes or until edges are set and centers look slightly underbaked.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Ensure ube halaya is at room temperature for easier mixing.
  • White chocolate chips add sweetness that complements the earthy ube flavor.
  • Cookies can be stored in an airtight container for up to 5 days.
