- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1/2 cup ube halaya (purple yam jam)
- 1 tsp ube extract
- Optional: 1/2 cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a large mixing bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and mix until well combined.
- Mix in the ube halaya and ube extract until evenly blended.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in white chocolate chips if using.
- Scoop dough using a tablespoon or cookie scoop and place on the prepared baking sheet.
- Bake for 10–12 minutes or until edges are set and centers look slightly underbaked.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Ensure ube halaya is at room temperature for easier mixing.
- White chocolate chips add sweetness that complements the earthy ube flavor.
- Cookies can be stored in an airtight container for up to 5 days.
