- 2 ripe mangoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, chopped
- 1/4 red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced (optional)
- Juice of 2 limes
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1/2 teaspoon chili powder (optional, for a kick)
Instructions
- In a large bowl, combine diced mango, black beans, bell pepper, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, pepper, and chili powder (if using).
- Pour the dressing over the salad and gently toss to combine.
- Fold in diced avocado just before serving.
- Chill for 15–30 minutes to allow flavors to meld, or serve immediately.
Notes
- Best enjoyed fresh, but can be stored in the fridge for up to 2 days
- Serve over greens or quinoa for a more filling meal
- Add jalapeño for extra heat
