Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, chopped
  • 1/4 red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced (optional)
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 teaspoon chili powder (optional, for a kick)

Instructions

  • In a large bowl, combine diced mango, black beans, bell pepper, red onion, and cilantro.
  • In a small bowl, whisk together lime juice, olive oil, salt, pepper, and chili powder (if using).
  • Pour the dressing over the salad and gently toss to combine.
  • Fold in diced avocado just before serving.
  • Chill for 15–30 minutes to allow flavors to meld, or serve immediately.

Notes

  • Best enjoyed fresh, but can be stored in the fridge for up to 2 days
