For the Bars:

  • 1 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1 cup butterscotch chips
  • 1 large egg
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 3/4 cup creamy peanut butter (divided)
  • 1/2 cup quick oats
  • 1/4 tsp salt
  • 1 tsp baking soda

For the Glaze:

  • 4 tbsp milk
  • 1/4 cup peanut butter (remaining portion)
  • 1 cup powdered sugar

Instructions

  1. Preheat the Oven:
    • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or non-stick spray.
  2. Cream the Butter and Sugars:
    • In a large bowl, beat the softened butter, granulated sugar, light brown sugar, and ½ cup of peanut butter until light and fluffy.
  3. Incorporate the Egg and Vanilla:
    • Stir in the egg and vanilla extract until well combined.
  4. Mix the Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking soda, salt, and oats.
  5. Combine Wet and Dry Mixtures:
    • Gradually add the dry ingredients to the wet mixture, stirring until a cohesive dough forms.
  6. Prepare for Baking:
    • Spread the dough evenly into the prepared baking pan. Sprinkle the butterscotch chips over the top for extra sweetness.
  7. Bake:
    • Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  8. Make the Glaze:
    • While the bars are baking, whisk together powdered sugar, milk, and the remaining ¼ cup of peanut butter until smooth.
  9. Glaze the Bars:
    • Pour the glaze over the bars immediately after they come out of the oven.
  10. Cool and Serve:
  • Allow the bars to cool completely in the pan before slicing into squares and serving.
