- 1/2 tsp pepper
- 1/2 tsp paprika
Dairy:
- 1 tbsp butter
- 2 cups cheddar cheese, shredded
- 1 cup milk
Instructions
- Cook the Ground Beef:
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess grease and set aside.
- Sauté Vegetables:
- In the same pot, melt the butter over medium heat. Add diced onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
- Add Potatoes and Broth:
- Stir in the diced potatoes, beef broth, salt, pepper, and paprika. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the potatoes are tender.
- Blend and Add Milk:
- Using a potato masher or immersion blender, lightly mash some of the potatoes to thicken the soup (optional). Stir in the milk and cooked ground beef.
- Add Cheese:
- Gradually stir in the shredded cheddar cheese until melted and smooth.
- Serve:
