Ingredients

Units Scale

Meat:

  • 1 lb ground beef

Produce:

  • 4 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Fresh parsley or green onions (for garnish)

Canned Goods:

  • 4 cups beef broth

Baking & Spices:

  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika

Dairy:

  • 1 tbsp butter
  • 2 cups cheddar cheese, shredded
  • 1 cup milk

Instructions

  1. Cook the Ground Beef:
    • In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess grease and set aside.
  2. Sauté Vegetables:
    • In the same pot, melt the butter over medium heat. Add diced onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
  3. Add Potatoes and Broth:
    • Stir in the diced potatoes, beef broth, salt, pepper, and paprika. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Blend and Add Milk:
    • Using a potato masher or immersion blender, lightly mash some of the potatoes to thicken the soup (optional). Stir in the milk and cooked ground beef.
  5. Add Cheese:
    • Gradually stir in the shredded cheddar cheese until melted and smooth.
  6. Serve:
    • Ladle into bowls, garnish with fresh parsley or green onions, and serve hot.

Notes

  • Customize: Add carrots or celery for more vegetables, or substitute ground beef with ground turkey for a leaner option.
  • Storage: Store leftovers in the refrigerator for up to 3 days. Reheat gently over low heat to avoid curdling the milk.
