  • 1 batch sausage gravy (homemade or store-bought)

  • 1 cup taco cheese blend (or shredded cheese of your choice)

Instructions

  1. Cook the Tater Tots:
    • Preheat your oven and bake the tater tots according to the package instructions until golden and crispy. Set aside.
  2. Make the Sausage Gravy:
    • If making homemade sausage gravy, cook ground sausage in a skillet over medium heat until browned. Stir in 2 tbsp of flour and cook for 1 minute. Slowly add 2 cups of milk, whisking until smooth, and cook until thickened. Season with salt and pepper.
  3. Scramble the Eggs:
    • In a large bowl, whisk the eggs with a pinch of salt and pepper. Heat a non-stick skillet over medium heat and scramble the eggs until just set and fluffy.
  4. Assemble the Bowls:
    • Divide the crispy tater tots among 4 bowls. Layer with scrambled eggs and pour sausage gravy over the top.
  5. Add the Cheese:
    • Sprinkle the taco cheese blend over each bowl. If desired, place the bowls under a broiler for 1–2 minutes to melt the cheese.
  6. Serve:
    • Garnish with fresh herbs or hot sauce if desired and serve warm.

  • For a spicy kick, use pepper jack cheese or add diced jalapeños.
  • Substitute sausage gravy with vegetarian gravy to make a meat-free version.
