Instructions
- Cook the Tater Tots:
- Preheat your oven and bake the tater tots according to the package instructions until golden and crispy. Set aside.
- Make the Sausage Gravy:
- If making homemade sausage gravy, cook ground sausage in a skillet over medium heat until browned. Stir in 2 tbsp of flour and cook for 1 minute. Slowly add 2 cups of milk, whisking until smooth, and cook until thickened. Season with salt and pepper.
- Scramble the Eggs:
- In a large bowl, whisk the eggs with a pinch of salt and pepper. Heat a non-stick skillet over medium heat and scramble the eggs until just set and fluffy.
- Assemble the Bowls:
- Divide the crispy tater tots among 4 bowls. Layer with scrambled eggs and pour sausage gravy over the top.
- Add the Cheese:
- Sprinkle the taco cheese blend over each bowl. If desired, place the bowls under a broiler for 1–2 minutes to melt the cheese.
