  • 1 Tablespoon ginger paste
  • 1 Tablespoon garlic paste

  • 1 teaspoon paprika
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garam masala
  • 1 Tablespoon oil (for cooking)

For Smoking the Chicken (Optional but Recommended):

  • Handful of wooden smoking chips
  • Aluminum foil

For the Garlic Butter Custard:

  • 1 head roasted garlic (or 4 cloves minced)
  • 1 large egg
  • 1/3 cup milk
  • 3 Tablespoons melted butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For Assembly:

  • 1 pack King’s Hawaiian Rolls (or substitute with French baguette, ciabatta, or any crusty bread)
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh parsley (for garnish)

Instructions

Step 1: Marinate and Cook the Chicken

  1. In a bowl, mix yogurt, ginger paste, garlic paste, lemon juice, and all spices. Add the cubed chicken and let it marinate for at least 30 minutes (overnight for best flavor).
  2. Heat 1 Tablespoon oil in a pan over medium-high heat. Cook the chicken for 8-10 minutes, stirring occasionally, until charred and fully cooked.

Step 2: Smoke the Chicken (Optional for Authentic Flavor)

  1. Heat a handful of smoking chips in aluminum foil over a low flame until they start smoking.
  2. Place the foil packet with smoking chips into the pan with the cooked chicken (flame off). Cover with a lid for 5-10 minutes, then discard the foil packet.

Step 3: Prepare the Garlic Butter Custard

  1. If using roasted garlic, mash it into a paste. (For fresh garlic, mince finely.)
  2. In a bowl, whisk together garlic, egg, milk, melted butter, salt, and black pepper.

Step 4: Prep the Bread

  1. Preheat oven to 375°F (190°C).
  2. Slice Hawaiian Rolls in half (or slice French bread lengthwise).
  3. Dip each bread half into the custard mixture, coating both sides.
  4. Place on a lined baking sheet and bake for 8-10 minutes, until lightly golden.

Step 5: Assemble and Bake

  1. Remove the bread from the oven and layer with tandoori chicken and shredded mozzarella.
  2. Return to the oven and bake for 10-12 minutes, until the cheese is melted and bubbly.
  3. Garnish with fresh parsley, slice, and serve warm!
