- 1 cup Medjool dates, pitted
- 1/2 cup tahini
- 1/4 cup raw cacao powder
- 1/4 cup chia seeds
- 1/4 cup hemp seeds
- 1/4 cup shredded unsweetened coconut (plus more for rolling)
- 1/2 tsp vanilla extract
- 1/8 tsp sea salt
Instructions
- Place the pitted dates in a food processor and pulse until they form a paste.
- Add tahini, cacao powder, chia seeds, hemp seeds, shredded coconut, vanilla extract, and sea salt.
- Process until well combined and a sticky dough forms.
- Using your hands, form the mixture into bite-sized balls.
- Roll each ball in additional shredded coconut, if desired.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to one week.
Notes
- You can substitute tahini with almond or peanut butter.
- Add a tablespoon of maple syrup if you prefer a sweeter taste.
- Try rolling the bites in cocoa powder or crushed nuts for variety.
