Description

Taco Spaghetti is a one-pot fusion dish that combines the bold flavors of tacos with the comforting appeal of spaghetti. Packed with seasoned ground beef, Rotel tomatoes, and melted cheese, this quick and easy dinner is perfect for busy weeknights!

 


Ingredients

  • 12 oz spaghetti
  • 1 lb ground beef
  • 1 packet taco seasoning (or 2 tbsp homemade blend)
  • 1 can Rotel tomatoes (diced tomatoes with green chilies, undrained)
  • 2 cups beef broth
  • 1 cup tomato sauce
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced red onion
  • Fresh cilantro for garnish
  • 1 tbsp olive oil

Instructions

1️⃣ Cook the Ground Beef:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain any excess grease.

2️⃣ Add Seasoning and Sauce:

  1. Sprinkle taco seasoning over the beef and stir to coat evenly.
  2. Add Rotel tomatoes, beef broth, and tomato sauce to the skillet. Stir well and bring to a simmer.

3️⃣ Cook the Pasta:

  1. Break the spaghetti in half and add it to the skillet, ensuring it’s fully submerged in the liquid.
  2. Cover and cook for 12–15 minutes, stirring occasionally, until the spaghetti is tender and most of the liquid is absorbed.

4️⃣ Add Cheese:

  • Sprinkle shredded cheddar cheese over the top. Cover the skillet and let the cheese melt, about 2–3 minutes.

5️⃣ Garnish and Serve:

  • Garnish with diced red onion and fresh cilantro. Serve immediately with additional toppings if desired.
