Description

A homemade version of the Taco Bell Beefy Melt Burrito, featuring seasoned ground beef, creamy nacho cheese, seasoned rice, crispy tortilla strips, and melty three-cheese blend, all wrapped in a warm flour tortilla. This fast-food favorite is easy to make and perfect for a quick, satisfying meal!

  • 1 tbsp olive oil

  • 1/2 cup water
  • For the Seasoned Rice:
  • 1 cup cooked white rice (jasmine or long-grain)
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 tbsp butter
  • Other Ingredients:
  • 1/2 cup nacho cheese sauce (store-bought or homemade)
  • 1 cup shredded three-cheese blend (cheddar, Monterey Jack, mozzarella)
  • 1/2 cup crispy tortilla strips (or crushed tortilla chips)
  • 4 large flour tortillas
  • 1/2 cup sour cream

Instructions

  • Cook the Seasoned Beef:
  • Heat olive oil in a skillet over medium-high heat.
  • Add ground beef, breaking it apart while cooking.
  • Stir in taco seasoning and water, then simmer for 5 minutes until thickened.
  • Remove from heat.
  • Prepare the Seasoned Rice:
  • In a bowl, mix cooked rice with butter, salt, cumin, paprika, garlic powder, and black pepper.
  • Stir well and set aside.
  • Assemble the Burritos:
  • Warm the flour tortillas in a dry pan for 15–20 seconds per side.
  • Spread nacho cheese sauce in the center.
  • Add a scoop of seasoned rice, then a layer of seasoned beef.
  • Sprinkle with three-cheese blend and crispy tortilla strips.
  • Drizzle with sour cream.
  • Fold & Toast the Burrito:
  • Fold in the sides, then roll tightly from the bottom up.
  • Heat a clean skillet over medium heat and lightly toast each burrito for 1–2 minutes per side until golden brown.
  • Serve & Enjoy!
  • Slice in half and serve with hot sauce, salsa, or guacamole.
