Scale
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 1 egg
- 1 teaspoon vanilla extract
- 1/3 cup brown sugar
- 2 teaspoons ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with butter.
- In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In a separate bowl, combine milk, melted butter, egg, and vanilla extract. Mix well. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing.
- In a small bowl, mix together brown sugar and cinnamon to create the cinnamon swirl mixture.
- Fill each muffin cup halfway with batter. Sprinkle about a teaspoon of the cinnamon sugar mixture on top of the batter. Add another layer of batter to cover the cinnamon sugar.
- Using a toothpick, gently swirl the cinnamon sugar into the batter to create a marbled effect.
- Bake the muffins for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the muffins cool in the tin for 5 minutes. Transfer them to a wire rack to cool completely.
Notes
- For added sweetness, sprinkle a touch of cinnamon sugar on top of the muffins before baking.
- Store leftovers in an airtight container for up to 3 days. Warm in the microwave for a fresh-out-of-the-oven taste.
- For a glaze, mix powdered sugar with a bit of milk and drizzle it over cooled muffins.
