Description

A healthy and flavorful breakfast pizza with a crispy sweet potato crust, topped with eggs, veggies, and cheese, perfect for a nutritious start to the day.


Ingredients

  • 2 medium sweet potatoes, peeled and grated
  • 1/4 cup almond flour
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded mozzarella cheese (optional for crust)
  • 1/2 cup shredded mozzarella cheese (for topping)
  • 1/4 cup diced red bell pepper
  • 1/4 cup chopped spinach
  • 23 large eggs
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine grated sweet potatoes, almond flour, 1 egg, garlic powder, salt, pepper, and optional cheese. Mix well.
  3. Spread the mixture onto the baking sheet in a circular pizza shape about 1/4 inch thick.
  4. Bake the crust for 20–25 minutes until firm and slightly golden.
  5. Remove crust and add toppings: sprinkle cheese, veggies, and crack eggs on top.
  6. Return to oven and bake an additional 10–12 minutes until eggs are set.
  7. Remove from oven and let cool slightly before slicing and serving.

Notes

  • You can customize the toppings with any vegetables or meats you like.
  • For a crispier crust, squeeze out excess moisture from grated sweet potatoes before mixing.
  • Use parchment paper to prevent sticking and for easier cleanup.
