Healthy and flavorful stuffed bell peppers filled with lean ground turkey, hearty brown rice, vegetables, and seasonings, baked to perfection.

- 4 large bell peppers (any color), tops cut off and seeds removed
- 1 lb ground turkey
- 1 cup cooked brown rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup shredded cheese (optional)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant.
- Add ground turkey and cook until browned. Season with Italian seasoning, salt, and pepper.
- Stir in diced tomatoes and cooked brown rice. Cook for 2–3 more minutes.
- Stuff each bell pepper with the turkey and rice mixture.
- Place stuffed peppers upright in a baking dish. Cover with foil and bake for 30 minutes.
- Remove foil, top with shredded cheese if using, and bake uncovered for an additional 10 minutes until cheese is melted and peppers are tender.
- Serve warm.
Notes
- You can substitute ground turkey with ground chicken or beef.
- Add chopped spinach or zucchini for extra veggies.
- Use quinoa instead of brown rice for a different texture.
