- 4 large bell peppers (any color), tops cut off and seeds removed
- 1 lb (450g) ground beef
- 1 cup cooked rice (white or brown)
- 1/2 cup onion, finely chopped
- 2 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 cup shredded mozzarella or cheddar cheese
- 2 tbsp olive oil
- Fresh parsley, for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Lightly brush bell peppers with olive oil and place them upright in a baking dish.
- In a skillet over medium heat, sauté onion and garlic in 1 tbsp olive oil until soft. Add ground beef and cook until browned. Drain excess fat.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Spoon the beef mixture evenly into the peppers. Top with shredded cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes, until cheese is melted and bubbly.
- Garnish with fresh parsley and serve hot.
