  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb (450g) ground beef
  • 1 cup cooked rice (white or brown)
  • 1/2 cup onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp olive oil
  • Fresh parsley, for garnish (optional)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Lightly brush bell peppers with olive oil and place them upright in a baking dish.
  • In a skillet over medium heat, sauté onion and garlic in 1 tbsp olive oil until soft. Add ground beef and cook until browned. Drain excess fat.
  • Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  • Spoon the beef mixture evenly into the peppers. Top with shredded cheese.
  • Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes, until cheese is melted and bubbly.
  • Garnish with fresh parsley and serve hot.
