Description

Stuffed bell peppers are a classic and hearty dish featuring hollowed bell peppers filled with a savory mixture of ground meat, rice, vegetables, and seasonings, then baked to perfection.


Ingredients

  • 4 large bell peppers, any color
  • 1 lb ground beef or ground turkey
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar cheese or mozzarella
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/4 cup water or broth (for baking dish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until softened.
  4. Add ground beef or turkey and cook until browned. Drain excess fat.
  5. Stir in diced tomatoes, tomato paste, cooked rice, Italian seasoning, salt, and pepper. Cook for 5-7 minutes.
  6. Remove from heat and mix in half of the shredded cheese.
  7. Stuff each pepper with the meat and rice mixture.
  8. Place stuffed peppers in a baking dish and add water or broth to the bottom of the dish.
  9. Cover with foil and bake for 30 minutes.
  10. Remove foil, sprinkle remaining cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is melted and bubbly.
  11. Let cool slightly before serving.

Notes

  • Use quinoa or cauliflower rice for a low-carb version.
  • Peppers can be pre-cooked for a softer texture.
  • Top with fresh herbs like parsley or basil for added flavor.
