Description

  • 1 cup fresh strawberries, finely diced

Instructions

  • Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  • Prepare Sponge Batter:
  • Beat egg yolks with sugar until pale and thick. Add milk, oil, and vanilla. Mix until smooth.
  • In a separate bowl, whip egg whites with salt (and cream of tartar if using) to stiff peaks.
  • Sift in flour to yolk mixture, mix gently, then fold in egg whites carefully.
  • Bake the Cake:
  • Spread batter evenly into prepared pan. Bake 10–12 minutes until golden and springy to the touch.
  • Roll While Warm:
  • Turn cake out onto a towel dusted with powdered sugar. Remove parchment and roll with the towel inside. Cool completely.
  • Make Filling:
  • Whip cream with powdered sugar and vanilla until stiff. Fold in diced strawberries.
  • Assemble:
  • Unroll the cake, spread with strawberry cream, and gently roll back up. Chill for 30 minutes before slicing.
  • Optionally, trim the ends and decorate with more whipped cream and sliced strawberries.
