- For the Sponge Cake:
- 4 large eggs, separated
- 1/2 cup granulated sugar
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1/2 teaspoon vanilla extract

- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar (optional)
- For the Strawberry Cream Filling:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, finely diced
Instructions
- Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- Prepare Sponge Batter:
- Beat egg yolks with sugar until pale and thick. Add milk, oil, and vanilla. Mix until smooth.
- In a separate bowl, whip egg whites with salt (and cream of tartar if using) to stiff peaks.
- Sift in flour to yolk mixture, mix gently, then fold in egg whites carefully.
- Bake the Cake:
- Spread batter evenly into prepared pan. Bake 10–12 minutes until golden and springy to the touch.
- Roll While Warm:
- Turn cake out onto a towel dusted with powdered sugar. Remove parchment and roll with the towel inside. Cool completely.
- Make Filling:
- Whip cream with powdered sugar and vanilla until stiff. Fold in diced strawberries.
- Assemble:
- Unroll the cake, spread with strawberry cream, and gently roll back up. Chill for 30 minutes before slicing.
- Optionally, trim the ends and decorate with more whipped cream and sliced strawberries.

- Use very ripe strawberries for the best flavor and sweetness.
- For extra stability, add a tablespoon of mascarpone cheese to the whipped cream.
