- 6 cups fresh spinach leaves
- 1 pint fresh strawberries, hulled and sliced
- 1/2 cup sliced almonds or candied pecans
- 1/4 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese (optional)
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Wash and dry the spinach leaves and place them in a large salad bowl.
- Add the sliced strawberries, almonds or pecans, red onion, and feta cheese if using.
- In a small bowl or jar, whisk together the balsamic vinegar, olive oil, honey (or maple syrup), Dijon mustard, salt, and pepper to make the vinaigrette.
- Pour the dressing over the salad just before serving and toss gently to combine.
- Serve immediately and enjoy!
Notes
- Use baby spinach for a more tender texture.
- You can substitute goat cheese or blue cheese for feta.
- Try adding grilled chicken for a complete meal.
- To make it vegan, omit the cheese or use a plant-based alternative and choose maple syrup instead of honey.
