Description

A refreshing and healthy salad combining sweet strawberries, fresh spinach, crunchy nuts, and tangy vinaigrette. Perfect for a light lunch or as a side dish.


Ingredients

  • 6 cups fresh spinach leaves
  • 1 pint fresh strawberries, hulled and sliced
  • 1/2 cup sliced almonds or candied pecans
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the spinach leaves and place them in a large salad bowl.
  2. Add the sliced strawberries, almonds or pecans, red onion, and feta cheese if using.
  3. In a small bowl or jar, whisk together the balsamic vinegar, olive oil, honey (or maple syrup), Dijon mustard, salt, and pepper to make the vinaigrette.
  4. Pour the dressing over the salad just before serving and toss gently to combine.
  5. Serve immediately and enjoy!

Notes

  • Use baby spinach for a more tender texture.
  • You can substitute goat cheese or blue cheese for feta.
  • Try adding grilled chicken for a complete meal.
