A light and hydrating beverage made with strawberries, mint, and chia seeds—perfect for a refreshing, healthy boost.

- 1 cup fresh strawberries, hulled and sliced
- 1 tablespoon chia seeds
- 1 tablespoon honey or maple syrup (optional)
- 1 tablespoon fresh mint leaves
- 2 cups cold water
- 1 tablespoon lemon juice
- Ice cubes, as needed
Instructions
- In a blender, combine the strawberries, lemon juice, honey or maple syrup (if using), and 1 cup of water. Blend until smooth.
- Strain the mixture through a fine mesh sieve to remove seeds and pulp if desired.
- Pour the mixture into a pitcher or jar. Add the remaining 1 cup of water and chia seeds. Stir well to combine.
- Add the mint leaves and refrigerate for at least 20–30 minutes to allow the chia seeds to expand and flavors to infuse.
- Stir well before serving and pour over ice. Garnish with extra mint or sliced strawberries if desired.
Notes
- For a stronger mint flavor, muddle the mint before adding it.
- Can be stored in the refrigerator for up to 2 days.
- Use maple syrup instead of honey to make it vegan.
