Scale
- 4 cups fresh strawberries, hulled and chopped
- 2 cups granulated sugar
- 2 tablespoons lemon juice
Instructions
- Place the strawberries in a large saucepan and mash them slightly with a potato masher to release some juices.
- Add the sugar and lemon juice to the saucepan and stir to combine.
- Bring the mixture to a boil over medium-high heat, stirring frequently.
- Reduce the heat and simmer for about 20–25 minutes, continuing to stir often, until the jam thickens.
- To test doneness, place a small amount of jam on a cold plate and run your finger through it. If it holds its shape, it’s ready.
- Remove from heat and let it cool slightly.
- Transfer the jam to sterilized jars and seal tightly. Let cool completely before refrigerating.
Notes
- Use ripe, fresh strawberries for the best flavor.
- Jam will thicken further as it cools.
- Store in the refrigerator for up to 3 weeks or freeze for longer storage.
