Ingredients

  • 4 cups water
  • 1/2 cup dried hibiscus flowers (or 4 hibiscus tea bags)
  • 1 cup fresh strawberries, hulled and sliced
  • 24 tablespoons honey or agave syrup (adjust to taste)
  • 1 tablespoon lemon juice (optional)
  • Ice cubes
  • Fresh mint leaves and strawberry slices for garnish (optional)

Instructions

  • Bring 4 cups of water to a boil in a saucepan.
  • Remove from heat, add hibiscus flowers or tea bags, and steep for 10 minutes.
  • Meanwhile, place strawberries in a blender and purée until smooth. Strain through a fine mesh sieve if desired for a smoother texture.
  • After steeping, strain the hibiscus tea and let it cool slightly.
  • In a pitcher, combine the hibiscus tea, strawberry purée, sweetener, and lemon juice. Stir well.
  • Refrigerate for at least 1 hour to chill.
  • Serve over ice with optional mint and strawberry garnish.

Notes

  • For a sparkling version, replace half the water with chilled sparkling water just before serving.
  • Use frozen strawberries if fresh aren’t available.
  • Hibiscus tea can stain; use caution when handling.
