- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tbsp matcha powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup freeze-dried strawberries, crushed (for frosting)
- 1/2 cup unsalted butter, softened (for frosting)
- 1 1/2 cups powdered sugar (for frosting)
- 1–2 tbsp milk (for frosting)
- 1/2 tsp vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, matcha powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Scoop tablespoon-sized amounts of dough and roll into balls. Place on the baking sheet and flatten slightly.
- Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely.
- To make the frosting, beat the softened butter until creamy. Add crushed freeze-dried strawberries and mix well.
- Add powdered sugar, milk, and vanilla extract, and beat until smooth and spreadable.
- Frost the cooled cookies with the strawberry frosting and allow to set before serving.
Notes
- Store cookies in an airtight container for up to 5 days.
- Adjust matcha powder to taste for stronger or milder flavor.
- Use food coloring in the frosting for a more vibrant pink if desired.
