Soft and chewy matcha cookies topped with a sweet and fruity strawberry frosting, combining earthy green tea flavors with a vibrant berry twist.

Ingredients

Units Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tbsp matcha powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup freeze-dried strawberries, crushed (for frosting)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 1 1/2 cups powdered sugar (for frosting)
  • 12 tbsp milk (for frosting)
  • 1/2 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, matcha powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Scoop tablespoon-sized amounts of dough and roll into balls. Place on the baking sheet and flatten slightly.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely.
  8. To make the frosting, beat the softened butter until creamy. Add crushed freeze-dried strawberries and mix well.
  9. Add powdered sugar, milk, and vanilla extract, and beat until smooth and spreadable.
  10. Frost the cooled cookies with the strawberry frosting and allow to set before serving.

Notes

  • Store cookies in an airtight container for up to 5 days.
  • Adjust matcha powder to taste for stronger or milder flavor.
  • Use food coloring in the frosting for a more vibrant pink if desired.
