- For the crust:
- 6 graham crackers (or digestive biscuits), crushed
- 2 tbsp melted butter

- 1/2 cup heavy whipping cream, whipped to soft peaks
- For the strawberry topping:
- 1 cup fresh strawberries, chopped
- 1–2 tbsp sugar (to taste)
- 1 tsp lemon juice
Instructions
- Make the crust:
- Mix crushed graham crackers with melted butter and sugar. Press a few spoonfuls into the bottoms of serving cups or jars.
- Prepare the cheesecake layer:
- Beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold in whipped cream until well combined and fluffy.
- Make the strawberry topping:
- Combine chopped strawberries, sugar, and lemon juice in a bowl. Let sit for 10–15 minutes to macerate and release juices.
- Assemble:
- Spoon cheesecake filling over the crust layer in each cup. Top with the strawberry mixture.
- Chill and serve:
- Refrigerate for at least 1 hour to firm up. Serve chilled, garnished with extra whipped cream or a strawberry slice if desired.
Notes
- Can be made 1–2 days in advance.
- Use strawberry jam if fresh strawberries aren’t available.
- Add a splash of vanilla or almond extract to the berries for extra flavor.
