Ingredients

Units Scale
  • For the crust:
  • 6 graham crackers (or digestive biscuits), crushed
  • 2 tbsp melted butter
  • 1 tbsp sugar (optional)
  • For the cheesecake filling:
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup heavy whipping cream, whipped to soft peaks
  • For the strawberry topping:
  • 1 cup fresh strawberries, chopped
  • 12 tbsp sugar (to taste)
  • 1 tsp lemon juice

Instructions

  • Make the crust:
  • Mix crushed graham crackers with melted butter and sugar. Press a few spoonfuls into the bottoms of serving cups or jars.
  • Prepare the cheesecake layer:
  • Beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold in whipped cream until well combined and fluffy.
  • Make the strawberry topping:
  • Combine chopped strawberries, sugar, and lemon juice in a bowl. Let sit for 10–15 minutes to macerate and release juices.
  • Assemble:
  • Spoon cheesecake filling over the crust layer in each cup. Top with the strawberry mixture.
  • Chill and serve:
  • Refrigerate for at least 1 hour to firm up. Serve chilled, garnished with extra whipped cream or a strawberry slice if desired.

Notes

  • Can be made 1–2 days in advance.
  • Use strawberry jam if fresh strawberries aren’t available.
  • Add a splash of vanilla or almond extract to the berries for extra flavor.
