Description

These Strawberry Cheesecake Crumb Bars are a heavenly mix of buttery crumb layers, creamy cheesecake filling, and a sweet strawberry swirl. Easy to make and perfect for potlucks, parties, or an everyday treat, they’re a portable version of your favorite strawberry cheesecake.


Ingredients

  • For the Crust and Crumb Topping
  • 2 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 tsp vanilla extract
  • For the Cheesecake Layer
  • 16 oz (2 blocks) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • For the Strawberry Layer
  • 1 and 1/2 cups chopped fresh strawberries
  • 2 tbsp sugar
  • 1 tsp cornstarch

Instructions

  • Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  • In a large bowl, mix flour, both sugars, baking powder, and salt.
  • Cut in cold butter until mixture resembles coarse crumbs. Stir in egg and vanilla.
  • Press two-thirds of the mixture into the prepared pan. Bake for 10 minutes.
  • In another bowl, beat cream cheese, sugar, vanilla, and egg until smooth.
  • Pour cheesecake mixture over the crust and spread evenly.
  • In a small saucepan, cook strawberries, sugar, and cornstarch over medium heat until thickened (about 5 minutes). Cool slightly.
  • Drop spoonfuls of strawberry mixture over cheesecake layer and swirl gently with a knife.
  • Sprinkle remaining crumb mixture on top.
  • Bake for 30–35 minutes or until top is golden and center is set.
  • Cool completely, then chill for at least 2 hours before slicing.

Notes

  • You can use strawberry jam in place of fresh berries for convenience.
  • These bars freeze well for up to 2 months—just thaw in the fridge overnight.
  • Add a pinch of cinnamon to the crumb mix for extra warmth.
