- For the Crust and Crumb Topping
- 2 and 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 1 tsp vanilla extract
- For the Cheesecake Layer
- 16 oz (2 blocks) cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- For the Strawberry Layer
- 1 and 1/2 cups chopped fresh strawberries
- 2 tbsp sugar
- 1 tsp cornstarch
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, mix flour, both sugars, baking powder, and salt.
- Cut in cold butter until mixture resembles coarse crumbs. Stir in egg and vanilla.
- Press two-thirds of the mixture into the prepared pan. Bake for 10 minutes.
- In another bowl, beat cream cheese, sugar, vanilla, and egg until smooth.
- Pour cheesecake mixture over the crust and spread evenly.
- In a small saucepan, cook strawberries, sugar, and cornstarch over medium heat until thickened (about 5 minutes). Cool slightly.
- Drop spoonfuls of strawberry mixture over cheesecake layer and swirl gently with a knife.
- Sprinkle remaining crumb mixture on top.
- Bake for 30–35 minutes or until top is golden and center is set.
- Cool completely, then chill for at least 2 hours before slicing.
Notes
- You can use strawberry jam in place of fresh berries for convenience.
- These bars freeze well for up to 2 months—just thaw in the fridge overnight.
- Add a pinch of cinnamon to the crumb mix for extra warmth.
