- 1/2 cup rolled oats (optional for texture)
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 tsp baking powder

- 3/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- For the Strawberry Layer:
- 1 1/2 cups chopped fresh strawberries
- 1 tbsp granulated sugar
- 1 tsp lemon juice
- 2 tsp cornstarch
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Make the crumb base/topping: In a bowl, mix flour, oats (if using), sugars, baking powder, and salt. Stir in melted butter and vanilla until crumbly. Reserve 1/2 cup for topping. Press the rest firmly into the pan.
- Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add egg and vanilla, mix until creamy. Spread over crust layer.
- Make the strawberry layer: Toss chopped strawberries with sugar, lemon juice, and cornstarch. Spread evenly over the cheesecake layer.
- Add crumble topping: Sprinkle reserved crumb mixture over the strawberries.
- Bake for 35–40 minutes, until the top is golden and the filling is just set.
- Cool completely, then chill for at least 2 hours before slicing.
Notes
- Can substitute fresh strawberries with strawberry jam or frozen berries (no need to thaw fully).
- Add a handful of white chocolate chips or almonds to the topping for extra flair.
- Best served chilled, but can be enjoyed at room temperature.
