  • 3/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • For the Cheesecake Filling:
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • For the Strawberry Layer:
  • 1 1/2 cups chopped fresh strawberries
  • 1 tbsp granulated sugar
  • 1 tsp lemon juice
  • 2 tsp cornstarch

Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  • Make the crumb base/topping: In a bowl, mix flour, oats (if using), sugars, baking powder, and salt. Stir in melted butter and vanilla until crumbly. Reserve 1/2 cup for topping. Press the rest firmly into the pan.
  • Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add egg and vanilla, mix until creamy. Spread over crust layer.
  • Make the strawberry layer: Toss chopped strawberries with sugar, lemon juice, and cornstarch. Spread evenly over the cheesecake layer.
  • Add crumble topping: Sprinkle reserved crumb mixture over the strawberries.
  • Bake for 35–40 minutes, until the top is golden and the filling is just set.
  • Cool completely, then chill for at least 2 hours before slicing.

Notes

  • Can substitute fresh strawberries with strawberry jam or frozen berries (no need to thaw fully).
  • Add a handful of white chocolate chips or almonds to the topping for extra flair.
  • Best served chilled, but can be enjoyed at room temperature.
