Description

Strawberry Cheesecake Brownies are a decadent dessert mashup with layers of rich, fudgy brownie, creamy vanilla cheesecake, and swirls of fresh strawberry. Perfect for Valentine’s Day, potlucks, or when you want to impress with a gorgeous, flavorful treat.

  • For the brownie layer:
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • For the cheesecake layer:
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • For the strawberry swirl:
  • 1/3 cup strawberry jam or strawberry puree
  • Fresh strawberries, finely diced (optional)

Instructions

  • Preheat oven:
  • Preheat to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease lightly.
  • Make brownie batter:
  • In a bowl, mix melted butter, sugar, eggs, and vanilla. Add cocoa, flour, salt, and baking powder. Stir until combined. Spread 3/4 of the batter into the prepared pan.
  • Prepare cheesecake layer:
  • Beat cream cheese, sugar, egg, and vanilla until smooth. Spread evenly over the brownie layer.
  • Add strawberry swirl:
  • Dollop strawberry jam or puree over the cheesecake layer. Use a knife or toothpick to gently swirl it in. Top with remaining brownie batter in small dollops and lightly swirl for a marbled effect. Add diced strawberries if using.
  • Bake:
  • Bake for 35–40 minutes or until the center is set and a toothpick comes out with a few moist crumbs. Cool completely before slicing.

Notes

  • Let brownies chill in the fridge for cleaner cuts.
  • Use seedless jam or strained puree for a smoother swirl.
  • Add chocolate chips to the brownie batter for extra richness.
