- For the brownie layer:
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1/2 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- For the cheesecake layer:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg
- 1/2 tsp vanilla extract
- For the strawberry swirl:
- 1/3 cup strawberry jam or strawberry puree
- Fresh strawberries, finely diced (optional)
Instructions
- Preheat oven:
- Preheat to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease lightly.
- Make brownie batter:
- In a bowl, mix melted butter, sugar, eggs, and vanilla. Add cocoa, flour, salt, and baking powder. Stir until combined. Spread 3/4 of the batter into the prepared pan.
- Prepare cheesecake layer:
- Beat cream cheese, sugar, egg, and vanilla until smooth. Spread evenly over the brownie layer.
- Add strawberry swirl:
- Dollop strawberry jam or puree over the cheesecake layer. Use a knife or toothpick to gently swirl it in. Top with remaining brownie batter in small dollops and lightly swirl for a marbled effect. Add diced strawberries if using.
- Bake:
- Bake for 35–40 minutes or until the center is set and a toothpick comes out with a few moist crumbs. Cool completely before slicing.
Notes
- Let brownies chill in the fridge for cleaner cuts.
- Use seedless jam or strained puree for a smoother swirl.
- Add chocolate chips to the brownie batter for extra richness.
