- 2 cups all-purpose flour
- 1/2 cup warm water
- 1 tsp instant yeast
- 2 tbsp sugar (for dough)
- 1/2 tsp baking powder
- 1 tbsp vegetable oil
- 3 egg yolks
- 1/3 cup sugar (for custard)
- 2 tbsp cornstarch
- 1/2 cup coconut milk
- 1/2 cup whole milk
- 1 tbsp unsalted butter
- 1/4 tsp vanilla extract
Instructions
- In a bowl, mix warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.
- Add flour and knead into a soft dough. Cover and let rise for 1 hour.
- To make custard, whisk egg yolks, sugar, and cornstarch in a saucepan.
- Gradually whisk in coconut milk and whole milk. Cook over medium heat, stirring constantly, until thickened.
- Remove from heat and stir in butter and vanilla extract. Let cool completely.
- Punch down dough and divide into equal pieces. Flatten each piece and fill with a spoonful of custard.
- Pinch dough to seal and shape into buns. Place on parchment paper and let rise for 20 minutes.
- Steam buns over high heat for 10-12 minutes.
- Remove from steamer and serve warm.
Notes
- Custard must be fully cooled before filling to avoid soggy dough.
- You can store buns in the freezer and re-steam to serve.
- Optional: Add a pinch of salt to enhance the sweetness of the custard.
