- 14 ounces dark vegan chocolate, chopped

- Toppings: melted dark vegan chocolate, unsweetened cocoa powder, shredded coconut, flaky sea salt, edible gold dust (optional)

Instructions
- In a medium saucepan over medium heat, combine beet sugar, coconut cream, and coconut oil. Simmer until the sugar dissolves and the mixture turns golden around the edges, approximately 8–10 minutes.
- Remove from heat and whisk in vanilla extract. Add chopped dark chocolate and stir until fully melted and smooth.
- Transfer the chocolate caramel mixture to a bowl and let it cool to room temperature.
- Once cooled, fold in the crisp rice cereal. Cover and refrigerate until the mixture is firm, about 1 hour.
- Line a baking sheet with wax paper. Using a small scoop or spoon, form the mixture into 1-inch balls and place them on the prepared sheet.
- Freeze the truffles for 15–20 minutes until firm.
- Roll the chilled truffles in your choice of toppings: melted chocolate, cocoa powder, shredded coconut, sea salt, or edible gold dust.
- Store truffles in an airtight container in the refrigerator until ready to serve.
