Description

Celebrate the vibrant flavors of spring with these delightful Spring Berry Puff Pastry Bites. Featuring a flaky puff pastry base filled with a luscious vanilla cream cheese mixture and topped with a medley of fresh berries, these bites are perfect for brunches, tea parties, or as a sweet treat to brighten your day.

Ingredients

Units Scale
  • 2 sheets puff pastry, thawed
  • 8 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar
  • 2 cups mixed fresh berries (blueberries, raspberries, blackberries)
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon powdered sugar (optional, for dusting)
  • Fetty’s Food Blog

Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a bowl, combine the softened cream cheese, vanilla extract, and granulated sugar. Mix until smooth.
  • On a lightly floured surface, roll out each puff pastry sheet and cut into 4 equal squares, yielding 8 squares total.
  • Place a tablespoon of the cream cheese mixture in the center of each square and top with a few mixed berries.
  • Fold the corners of each square towards the center, pinching them together to form a blossom shape.
  • Brush the tops with the beaten egg.
  • Bake for 18–20 minutes, or until the pastries are golden brown and puffed.
  • Allow to cool slightly, then dust with powdered sugar if desired.

Notes

  • Ensure the puff pastry remains cold while working with it to achieve the best puff during baking.
  • You can substitute the mixed berries with your favorite seasonal fruits.
  • For an added touch, drizzle with a simple glaze made from powdered sugar and lemon juice.
