  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1 teaspoon lemon juice
  • 1 teaspoon honey (optional)
  • Toppings:
  • 1/4 cup granola
  • Fresh mint leaves for garnish

Instructions

  • In a bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well to prevent clumping.
  • Cover and refrigerate for at least 4 hours or overnight until the mixture achieves a pudding-like consistency.
  • In a separate bowl, mix the fresh berries with lemon juice and honey (if using). Let it sit for 10 minutes to macerate.
  • To assemble the parfaits, layer the chia pudding and berry mixture in serving glasses or jars. Repeat the layers as desired.
  • Top with granola and garnish with fresh mint leaves. Serve immediately or refrigerate until ready to enjoy.​

  • For a creamier texture, substitute almond milk with coconut milk.
