Ingredients

Units Scale
  • 4 boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup peach preserves or peach jam
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • 1/2 teaspoon smoked paprika
  • Optional: fresh peach slices, chopped parsley for garnish

Instructions

  • Preheat grill to medium-high heat.
  • Brush chicken with olive oil and season with salt and pepper.
  • In a small saucepan, combine peach preserves, vinegar, mustard, garlic, and paprika. Simmer over medium heat for 5 minutes until slightly thickened.
  • Grill chicken for 6–7 minutes per side, or until fully cooked. During the last few minutes, brush generously with the peach glaze.
  • Remove from grill and brush once more with glaze. Garnish with fresh peach slices and parsley if desired.

Notes

  • You can also cook this on a grill pan or bake in the oven at 400°F. The glaze works great on pork or tofu too!
