- 4 boneless, skinless chicken thighs or breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup peach preserves or peach jam
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon smoked paprika
- Optional: fresh peach slices, chopped parsley for garnish
Instructions
- Preheat grill to medium-high heat.
- Brush chicken with olive oil and season with salt and pepper.
- In a small saucepan, combine peach preserves, vinegar, mustard, garlic, and paprika. Simmer over medium heat for 5 minutes until slightly thickened.
- Grill chicken for 6–7 minutes per side, or until fully cooked. During the last few minutes, brush generously with the peach glaze.
- Remove from grill and brush once more with glaze. Garnish with fresh peach slices and parsley if desired.
Notes
- You can also cook this on a grill pan or bake in the oven at 400°F. The glaze works great on pork or tofu too!
