Description

A hearty and comforting Split Pea Soup made with dried split peas, vegetables, and seasonings. Perfect for a warm, nutritious meal.


Ingredients

  • 2 cups dried green split peas, rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth (or water)
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 1 smoked ham hock or 1 cup diced cooked ham

Instructions

  1. Rinse the split peas under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Add the split peas, vegetable broth, bay leaf, thyme, and ham (if using).
  5. Bring to a boil, then reduce heat and simmer uncovered for about 1 to 1.5 hours, or until peas are soft and soup is thickened.
  6. Stir occasionally and add more water or broth if needed.
  7. Remove bay leaf and ham hock if used. Season with salt and pepper to taste.
  8. For a smoother texture, use an immersion blender to partially puree the soup.
  9. Serve hot with bread or croutons.

Notes

  • Soup thickens as it cools; add water when reheating if needed.
  • For a vegetarian version, omit the ham.
  • Can be stored in the refrigerator for up to 5 days or frozen for longer storage.
