- Zest of 1 lemon
- 1 garlic clove, minced
- 2 teaspoons extra virgin olive oil
- Pinch of salt and pepper
Instructions
Step 1: Prepare the Filling
- Preheat the oven to 210°C (fan-forced) and line two baking trays with parchment paper.
- Ensure spinach is thoroughly dried. Combine spinach, spring onions, feta, parmesan, salt, and pepper in a mixing bowl. Mix well to form a thick, spreadable paste.
Step 2: Assemble the Pinwheels
- Lay one sheet of gluten-free puff pastry on a flat surface. Spread a portion of the spinach mixture evenly over the pastry, leaving a small border along one edge.
- Roll the pastry tightly into a spiral log and gently press to seal the edge.
