  • 4 sheets gluten-free puff pastry (e.g., Simply Wize Puff Pastry)
  • 200g spinach leaves, washed, dried, and finely chopped
  • 4 spring onions, finely sliced
  • 150g Greek feta, crumbled
  • 50g parmesan cheese, finely grated
  • 1 egg, whisked
  • Salt and pepper, to taste

For the Yoghurt Dip:

  • 150g Greek yogurt
  • Zest of 1 lemon
  • 1 garlic clove, minced
  • 2 teaspoons extra virgin olive oil
  • Pinch of salt and pepper

Instructions

Step 1: Prepare the Filling

  1. Preheat the oven to 210°C (fan-forced) and line two baking trays with parchment paper.
  2. Ensure spinach is thoroughly dried. Combine spinach, spring onions, feta, parmesan, salt, and pepper in a mixing bowl. Mix well to form a thick, spreadable paste.

Step 2: Assemble the Pinwheels

  1. Lay one sheet of gluten-free puff pastry on a flat surface. Spread a portion of the spinach mixture evenly over the pastry, leaving a small border along one edge.
  2. Roll the pastry tightly into a spiral log and gently press to seal the edge.

Step 3: Slice and Bake

  1. Slice the log into 2cm thick pinwheels. Arrange the slices on the prepared baking trays, spacing them slightly apart.
  2. Lightly brush each pinwheel with whisked egg.
  3. Bake for 20 minutes, or until golden brown and puffed.

Step 4: Prepare the Yoghurt Dip

  1. While the pinwheels bake, combine Greek yogurt, lemon zest, minced garlic, olive oil, salt, and pepper in a small bowl. Stir until smooth.

Step 5: Serve

  1. Let the pinwheels cool for 10 minutes before serving. Arrange on a platter with the yogurt dip on the side.

Air Fryer Instructions

  • Halve the ingredients and prepare as directed in steps 1–3.
  • Line the air fryer basket with parchment paper and place the pinwheels in a single layer, ensuring they don’t overlap.
