- 200g feta cheese, crumbled
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp ground black pepper
- 2 tbsp olive oil

Instructions
Prepare the Dough:
- Combine Dry Ingredients: Whisk together flour and salt in a large mixing bowl.
- Add Wet Ingredients: Create a well in the center of the flour mixture and add olive oil and warm water.
- Knead the Dough: Mix and knead on a floured surface for 5-7 minutes until the dough is smooth and elastic. Add flour as needed if the dough is sticky.
- Rest the Dough: Place the dough in a bowl, cover with a clean kitchen towel, and rest for 15 minutes.
Prepare the Filling:
- Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add onion and sauté for 3-4 minutes until translucent. Add garlic and cook for an additional minute.
- Cook Spinach: Add spinach to the skillet. Cook until wilted and any excess moisture evaporates. For frozen spinach, ensure it’s thoroughly drained before adding.
- Combine Ingredients: Remove skillet from heat and let cool slightly. Stir in crumbled feta, oregano, and black pepper. Adjust seasoning as needed.
Assemble the Gözleme:
- Divide Dough: Divide the dough into 4 equal portions and roll each into a ball. Let them rest briefly.
- Roll Out Dough: Flatten each dough ball into a thin circle or oval, about 1-2 mm thick.
- Add Filling: Spoon spinach and feta filling onto one half of each dough circle, leaving a small border.
- Fold and Seal: Fold the dough over the filling, creating a half-moon shape. Press edges firmly to seal.
Cook the Gözleme:
- Heat Skillet: Warm a non-stick skillet over medium heat with a small amount of olive oil or butter.
- Cook Gözleme: Place the folded gözleme on the skillet. Cook for 3-4 minutes per side, or until golden brown and crispy. Adjust heat as needed.
Serve:
- Garnish: Garnish with dill or parsley and serve with lemon wedges.
- Accompaniments: Pair with yogurt, a green salad, or a dipping sauce for a complete meal.
