Description

For the Dough:

  • 2 cups (250g) all-purpose flour
  • 1 tsp salt
  • 1 tbsp olive oil
  • 3/4 cup (180ml) warm water (add more as needed)

For the Filling:

  • 300g fresh spinach, washed and chopped (or 200g frozen spinach, thawed and drained)
  • 200g feta cheese, crumbled
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp ground black pepper
  • 2 tbsp olive oil

For Cooking:

  • Additional olive oil or butter for greasing the skillet

Optional Garnish:

  • Fresh dill or parsley, chopped
  • Lemon wedges

Instructions

Prepare the Dough:

  1. Combine Dry Ingredients: Whisk together flour and salt in a large mixing bowl.
  2. Add Wet Ingredients: Create a well in the center of the flour mixture and add olive oil and warm water.
  3. Knead the Dough: Mix and knead on a floured surface for 5-7 minutes until the dough is smooth and elastic. Add flour as needed if the dough is sticky.
  4. Rest the Dough: Place the dough in a bowl, cover with a clean kitchen towel, and rest for 15 minutes.

Prepare the Filling:

  1. Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add onion and sauté for 3-4 minutes until translucent. Add garlic and cook for an additional minute.
  2. Cook Spinach: Add spinach to the skillet. Cook until wilted and any excess moisture evaporates. For frozen spinach, ensure it’s thoroughly drained before adding.
  3. Combine Ingredients: Remove skillet from heat and let cool slightly. Stir in crumbled feta, oregano, and black pepper. Adjust seasoning as needed.

Assemble the Gözleme:

  1. Divide Dough: Divide the dough into 4 equal portions and roll each into a ball. Let them rest briefly.
  2. Roll Out Dough: Flatten each dough ball into a thin circle or oval, about 1-2 mm thick.
  3. Add Filling: Spoon spinach and feta filling onto one half of each dough circle, leaving a small border.
  4. Fold and Seal: Fold the dough over the filling, creating a half-moon shape. Press edges firmly to seal.

Cook the Gözleme:

  1. Heat Skillet: Warm a non-stick skillet over medium heat with a small amount of olive oil or butter.
  2. Cook Gözleme: Place the folded gözleme on the skillet. Cook for 3-4 minutes per side, or until golden brown and crispy. Adjust heat as needed.

Serve:

  1. Garnish: Garnish with dill or parsley and serve with lemon wedges.
  2. Accompaniments: Pair with yogurt, a green salad, or a dipping sauce for a complete meal.

Notes

  • Dough Substitutes: If short on time, use store-bought flatbread dough.
  • Storage: Gözleme can be reheated in a skillet or oven for a crispy texture.
