Description

Delicious and flaky puff pastry rolls filled with a savory blend of spinach and three cheeses, perfect as a party appetizer or holiday treat.

 


Ingredients

  • 300g fresh spinach
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 egg (for filling)
  • Salt, to taste
  • 1/2 tsp black pepper, freshly ground
  • 250g ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 puff pastry sheet
  • 1 egg, beaten with 1 tbsp milk (for egg wash)
  • Sesame seeds (optional, for sprinkling)

Instructions

  • Preheat Oven:
    Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
  • Cook Spinach:
    • Heat olive oil in a skillet over medium heat.
    • Add minced garlic and sauté until fragrant.
    • Add spinach and cook until wilted.
    • Season with salt and black pepper. Let cool slightly.
  • Make the Filling:
    • In a mixing bowl, combine the cooled spinach, ricotta cheese, mozzarella, and Parmesan. Stir until well mixed.
  • Assemble the Rolls:
    • Roll out the puff pastry on a lightly floured surface.
    • Spread the spinach and cheese mixture evenly over the pastry, leaving a small margin at the edges.
    • Roll the pastry tightly into a log and pinch the edges to seal.
  • Slice and Prepare for Baking:
    • Cut the log into 2-inch slices and place them on the prepared baking tray.
    • Brush the tops with the egg wash and sprinkle with sesame seeds, if using.
  • Bake:
    • Bake for 20-25 minutes, or until the pastry is puffed and golden brown.

Notes

  • Ensure the spinach is well-drained to prevent the filling from becoming soggy.
  • You can freeze the unbaked rolls for later and bake directly from frozen (adjust baking time accordingly).
  • Experiment with different cheese blends or add spices like nutmeg for extra flavor.
