- 1 small onion, diced
- 1 bell pepper, diced
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- 1 cup long grain rice
- 2 cups chicken broth
- 1 tablespoon tomato paste (optional)

Instructions
- Cook the Sausage:
- Heat oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 4–5 minutes. Remove and set aside.
- Sauté Veggies:
- In the same skillet, add onion and bell pepper. Sauté for 3–4 minutes until softened. Add garlic, paprika, red pepper flakes, salt, and pepper. Cook for 1 minute.
- Add Rice & Broth:
- Stir in the rice and tomato paste (if using), coating the grains. Pour in chicken broth and bring to a boil.
- Simmer:
- Reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed. Stir in sausage in the last 5 minutes.
- Finish & Serve:

Notes
- Use pre-cooked sausage for quicker cooking.
- Add frozen peas or spinach at the end for extra veggies.
