Description

This Spicy Sausage and Rice Skillet is a quick, flavorful dish loaded with smoky sausage, tender rice, and zesty spices. It’s all cooked in one pan for easy cleanup and packed with comfort food vibes—perfect for a busy weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 12 oz spicy sausage (chorizo, andouille, or Italian), sliced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 tablespoon tomato paste (optional)
  • Fresh parsley or green onions, for garnish

Instructions

  • Cook the Sausage:
  • Heat oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 4–5 minutes. Remove and set aside.
  • Sauté Veggies:
  • In the same skillet, add onion and bell pepper. Sauté for 3–4 minutes until softened. Add garlic, paprika, red pepper flakes, salt, and pepper. Cook for 1 minute.
  • Add Rice & Broth:
  • Stir in the rice and tomato paste (if using), coating the grains. Pour in chicken broth and bring to a boil.
  • Simmer:
  • Reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed. Stir in sausage in the last 5 minutes.
  • Finish & Serve:
  • Fluff rice with a fork. Garnish with parsley or green onions. Serve hot.

Notes

  • Use pre-cooked sausage for quicker cooking.
  • Add frozen peas or spinach at the end for extra veggies.
  • Make it extra spicy with cayenne or hot sauce!
