Description

These Spicy Mexican Corn Bites combine sweet corn kernels with a creamy, zesty sauce and bold spices, topped with queso fresco and cilantro. Perfect as a snack, appetizer, or side dish, and ready in just 15 minutes!

  • 2 cups corn kernels (fresh, frozen, or canned)

For the Sauce:

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and pepper to taste

Garnishes (Optional):

  • 1/2 cup crumbled queso fresco or cotija cheese
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 small red onion, finely diced
  • 1 jalapeño, finely chopped
  • 1 tablespoon hot sauce

 


Instructions

  • Prepare the Corn:
    • If using fresh corn, cut kernels off the cob.
    • Thaw and drain frozen corn, or drain and rinse canned corn.
  • Make the Spicy Sauce:
    • In a medium bowl, mix mayonnaise, sour cream, lime juice, chili powder, smoked paprika, cumin, cayenne pepper, salt, and pepper.
    • Stir until the sauce is smooth and well blended.
  • Combine the Corn:
    • Add the prepared corn kernels to the bowl with the sauce. Toss until the corn is evenly coated.
  • Add Garnishes:
    • Sprinkle crumbled queso fresco or cotija cheese over the top.
    • Add chopped cilantro, diced red onion, and jalapeño for additional texture and flavor.
    • Drizzle with hot sauce for extra heat if desired.
  • Serve:
    • Serve immediately as a warm snack, side dish, or appetizer.
    • For a chilled version, refrigerate for 30 minutes before serving.
