Description

Spicy Chickpea Wraps with Tahini Sauce are a bold and satisfying plant-based meal packed with protein, fiber, and tons of flavor. Roasted spiced chickpeas are wrapped in soft tortillas with crisp veggies and drizzled in creamy tahini sauce. Ideal for a quick lunch, meal prep, or meatless dinner option.

  • 1 can (15 oz) chickpeas, drained, rinsed, and patted dry
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper, to taste
  • For the Tahini Sauce
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 23 tablespoons water (to thin)
  • Salt, to taste
  • For the Wraps
  • 4 whole wheat or gluten-free tortillas
  • 1 cup shredded lettuce or spinach
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • Fresh herbs (parsley or cilantro), for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss chickpeas with olive oil and spices, then spread on a baking sheet. Roast for 20–25 minutes, shaking halfway through.
  • While chickpeas roast, whisk together all tahini sauce ingredients in a bowl, adding water until smooth and pourable.
  • Warm tortillas slightly, then layer with greens, carrots, cucumber, onion, and roasted chickpeas.
  • Drizzle with tahini sauce, sprinkle with herbs, and roll up into wraps.
  • Serve immediately or wrap in foil for an on-the-go meal.

Notes

  • Add avocado slices for creaminess
