- 1 can (15 oz) chickpeas, drained, rinsed, and patted dry
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- For the Tahini Sauce
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 2–3 tablespoons water (to thin)
- Salt, to taste
- For the Wraps
- 4 whole wheat or gluten-free tortillas
- 1 cup shredded lettuce or spinach
- 1/2 cup shredded carrots
- 1/2 cup cucumber, thinly sliced
- 1/4 cup red onion, thinly sliced
- Fresh herbs (parsley or cilantro), for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss chickpeas with olive oil and spices, then spread on a baking sheet. Roast for 20–25 minutes, shaking halfway through.
- While chickpeas roast, whisk together all tahini sauce ingredients in a bowl, adding water until smooth and pourable.
- Warm tortillas slightly, then layer with greens, carrots, cucumber, onion, and roasted chickpeas.
- Drizzle with tahini sauce, sprinkle with herbs, and roll up into wraps.
- Serve immediately or wrap in foil for an on-the-go meal.
