Instructions
- In a small saucepan, combine 1 cup water and mint leaves. Bring just to a simmer, then remove from heat. Let steep for 10 minutes. Strain and cool.
- In a pitcher, combine lemon juice and sweetener. Stir until dissolved.
- Add the cooled mint infusion and mix well.
- Just before serving, pour in sparkling water and stir gently.
- Serve over ice with lemon slices and mint sprigs for garnish.
