Description
A refreshing, herbaceous and citrusy non-alcoholic beverage perfect for summer, combining the brightness of lemon with the aromatic touch of thyme and a fizzy sparkle.

- 1 cup water
- 1/2 cup sugar
- 6–8 fresh thyme sprigs
- 1/2 cup fresh lemon juice (about 2 lemons)
- 2 cups sparkling water
- Ice cubes, for serving
- Lemon slices and thyme sprigs, for garnish (optional)
Instructions
- In a small saucepan, combine water, sugar, and thyme sprigs. Bring to a simmer over medium heat, stirring until the sugar dissolves.
- Remove from heat and let steep for 15 minutes.
- Strain the thyme syrup into a jar and let cool.
- In a pitcher, combine the lemon juice and 1/4 to 1/2 cup of thyme syrup (to taste).
- Add sparkling water and stir gently.
- Fill glasses with ice and pour the tonic over.
- Garnish with lemon slices and fresh thyme sprigs if desired.
Notes
- Adjust sweetness by adding more or less thyme syrup to taste.
- Can be made ahead—store the thyme syrup in the fridge for up to a week.
- Try adding a splash of gin or vodka for a spirited version.
