Description

A refreshing, herbaceous and citrusy non-alcoholic beverage perfect for summer, combining the brightness of lemon with the aromatic touch of thyme and a fizzy sparkle.


Ingredients

  • 1 cup water
  • 1/2 cup sugar
  • 68 fresh thyme sprigs
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 2 cups sparkling water
  • Ice cubes, for serving
  • Lemon slices and thyme sprigs, for garnish (optional)

Instructions

  1. In a small saucepan, combine water, sugar, and thyme sprigs. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  2. Remove from heat and let steep for 15 minutes.
  3. Strain the thyme syrup into a jar and let cool.
  4. In a pitcher, combine the lemon juice and 1/4 to 1/2 cup of thyme syrup (to taste).
  5. Add sparkling water and stir gently.
  6. Fill glasses with ice and pour the tonic over.
  7. Garnish with lemon slices and fresh thyme sprigs if desired.

Notes

  • Adjust sweetness by adding more or less thyme syrup to taste.
  • Can be made ahead—store the thyme syrup in the fridge for up to a week.
  • Try adding a splash of gin or vodka for a spirited version.
