Step 1: Prepare the Dry Ingredients
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
Step 2: Cream the Butter and Sugar
- In a large mixing bowl, beat the butter and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract (if using). Mix until well combined.
Step 3: Add the Raspberries
- Stir in the raspberry jam or mashed raspberries and the lemon zest (if using) until evenly incorporated.
Step 4: Combine Wet and Dry Ingredients
