- 4 boneless, skinless chicken thighs or breasts
- 2 tablespoons all-purpose flour (for dredging)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 2 tablespoons butter or oil
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons flour (for gravy)
- 2 cups chicken broth
- 1/2 cup heavy cream or whole milk
- Optional: chopped parsley or thyme for garnish
Instructions
- Prep Chicken:
- Mix flour, paprika, garlic powder, salt, and pepper. Lightly dredge chicken in the mixture.
- Sear Chicken:
- In a large skillet over medium heat, melt butter or heat oil. Sear chicken 4–5 minutes per side until golden brown. Remove and set aside.
- Make the Gravy:
- In the same skillet, add onions and cook until soft (3–4 minutes). Add garlic and cook another minute.
- Stir in 2 tablespoons flour and cook for 1 minute. Slowly whisk in chicken broth, then add cream. Simmer until thickened (about 5 minutes).
- Smother the Chicken:
- Return chicken to the skillet. Simmer in gravy for 10–15 minutes until cooked through and tender.
- Serve:
- Spoon gravy over chicken and garnish with herbs. Serve hot with your favorite sides.
Notes
- Use bone-in chicken for extra flavor (just increase cook time).
- Add mushrooms or spinach to the gravy for variation.
