- For the Beef Bites & Potatoes:
- 2 lbs beef chuck or sirloin, cut into bite-sized pieces
- 1 1/2 lbs baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp dried thyme
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tbsp Worcestershire sauce
- 1/2 cup beef broth
- Garnish (Optional):
- 2 tbsp fresh parsley, chopped
- Grated Parmesan cheese
Instructions
- Prepare the Slow Cooker:
- Lightly grease the slow cooker with cooking spray or a bit of butter.
- Season the Beef & Potatoes:
- In a large bowl, toss the beef bites with salt, pepper, paprika, onion powder, thyme, and red pepper flakes.
- Add the baby potatoes and mix with the seasoned beef.
- Add Ingredients to the Slow Cooker:
- Pour melted butter, minced garlic, Worcestershire sauce, and beef broth over the beef and potatoes.
- Stir gently to combine.
- Cook:
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the beef is tender and the potatoes are soft.
- Serve & Garnish:
- Sprinkle with fresh parsley and grated Parmesan if desired.
- Serve warm and enjoy!
Notes
- For extra flavor, sear the beef bites in a hot pan before adding them to the slow cooker.
- Yukon gold or red potatoes work best as they hold their shape well.
