Ingredients

Units Scale
  • Cake:
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup whole milk
  • Frosting:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 12 tbsp milk or cream
  • A few drops of blue gel food coloring
  • Decoration:
  • 1 mini rubber duck topper (non-edible or fondant)
  • Optional: pastel sprinkles or small sugar pearls

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 4-inch round cake pan or ramekin.
  • In a bowl, whisk flour, baking powder, baking soda, and salt.
  • In another bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  • Gradually mix in dry ingredients, alternating with milk, until fully combined.
  • Pour batter into prepared pan and bake for 20–25 minutes or until a toothpick comes out clean.
  • Let cake cool completely before frosting.
  • For frosting, beat butter until creamy. Add powdered sugar and milk. Tint with blue food coloring.
  • Frost cake smoothly or with soft waves to mimic water. Top with a mini rubber duck.

Notes

  • Always check that the rubber duck topper is clean and safe if it’s non-edible.
  • You can substitute sugar with mashed banana or applesauce for a baby-friendly version.
  • Make in advance and store frosted cake in the fridge for up to 2 days.
