This Simple Rubber Duck Smash Cake is a sweet and fun single-layer mini cake decorated with pastel blue frosting and topped with a cute rubber duck. - Cake:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, room temperature
- 1/3 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup whole milk
- Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1–2 tbsp milk or cream
- A few drops of blue gel food coloring
- Decoration:
- 1 mini rubber duck topper (non-edible or fondant)
- Optional: pastel sprinkles or small sugar pearls
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 4-inch round cake pan or ramekin.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
- Gradually mix in dry ingredients, alternating with milk, until fully combined.
- Pour batter into prepared pan and bake for 20–25 minutes or until a toothpick comes out clean.
- Let cake cool completely before frosting.
- For frosting, beat butter until creamy. Add powdered sugar and milk. Tint with blue food coloring.
- Frost cake smoothly or with soft waves to mimic water. Top with a mini rubber duck.
Notes
- Always check that the rubber duck topper is clean and safe if it’s non-edible.
- You can substitute sugar with mashed banana or applesauce for a baby-friendly version.
- Make in advance and store frosted cake in the fridge for up to 2 days.
