Ingredients

Units Scale

For the Chicken:

  • 1 batch Grilled Sesame Chicken (prepared separately)

For the Salad:

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1/2 cup diced green onion
  • 3/4 cup freshly diced cilantro
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly julienned
  • 1 jalapeño, seeded and diced

For the Dressing:

  • 1 batch Sesame Ginger Dressing

For Serving:

  • 1/3 cup toasted sliced almonds
  • 1/3 cup roasted cashew halves
  • Sesame seeds (for garnish)
  • Extra cilantro and green onion (for garnish)
  • A few jalapeño slices
  • Optional: Crispy wonton strips

Instructions

  • Prepare the Chicken: Marinate and cook the chicken using your favorite grilled sesame chicken recipe. Set aside to rest while preparing the salad.
  • Make the Dressing: Whisk together the sesame ginger dressing and keep it ready for use.
  • Assemble the Salad:
    • In a large mixing bowl, combine green and red cabbage, green onion, cilantro, carrots, bell pepper, and jalapeño.
    • Pour the sesame ginger dressing over the vegetables and toss until well-coated.
  • Marinate the Salad: Cover the salad and let it sit for 10-15 minutes to allow the flavors to meld while you finish grilling or baking the chicken.
  • Plate and Garnish:
    • Arrange the salad on a serving platter. Slice the grilled sesame chicken and lay it on top.
    • Garnish with toasted almonds, cashew halves, sesame seeds, extra cilantro, green onion, and jalapeño slices. Add crispy wonton strips if desired for extra crunch.
  • Serve: Enjoy as a hearty main dish or a flavorful side dish.

Notes

  • To make this salad fully vegetarian or vegan, replace the chicken with crispy tofu or roasted chickpeas.
  • For added crunch, include water chestnuts or sliced radishes.
  • Leftovers can be stored in an airtight container for up to 2 days; keep the dressing separate for optimal freshness.
