- 1 tablespoon dark soy sauce (for color and depth)
- 1/2 tablespoon sugar
- 1 teaspoon sesame oil
- Optional toppings: chili oil, sesame seeds, fried shallots, or a fried egg
Instructions
- Cook Noodles:
- Cook noodles according to package instructions. Drain and set aside.
- Make Scallion Oil:
- Heat neutral oil in a pan over medium heat. Add scallions and cook until golden and crispy, about 5–7 minutes. Remove scallions and set aside, leaving oil in the pan.
- Make Sauce:
- To the hot oil, add soy sauce, dark soy sauce, sugar, and sesame oil. Stir to combine and heat for 1 minute.
- Assemble:
- Toss cooked noodles in the sauce. Top with crispy scallions and desired garnishes.
